Creating Together: A New Experience
Hi everyone, I’m Nissy! I joined THE GOOD CAT SCRATCH as an apprentice in September 2025. Every day, I’m working hard to learn from my Senpai (先輩/Seniors) while contributing to the studio’s daily operations.
At our studio, we have a special bi-monthly activities called “Outing.” It’s a time for us to step away from our daily creative work to sharpen our sensibilities. By experiencing something new together as a team, we bring back fresh inspiration and positive vibes to the studio—it’s an essential time for us to reset and realign our minds.
Takashi Tsurumi is a pâtissier who leads “Tsurumi Seika” and produces menus nationwide. He blends traditional techniques with creative flair to offer modern sweets that enrich everyday life.
On March 31st, amidst the falling rain, we headed to “Tsurumi Seika” in Tokyo, where pâtissier Takashi Tsurumi gave us a warm welcome.
This studio offers group lessons using home ovens and tools, making it easy for anyone to enjoy baking at home. It’s a wonderful space where the focus is on “relaxed enjoyment”—savoring the freshness of homemade treats and the luxury of using great ingredients to create something truly special.
Cherishing First Moments
We started by preparing the dough. Under the teacher’s guidance, the room was filled with excitement as we navigated the unfamiliar process, jokingly asking things like, “Are we doing this right?!” or “Is it actually looking okay?”

Watching a team member’s steady hands, the rest of us couldn’t help but let out a collective “Ooh!” of admiration. Though we had started the task with a bit of hesitation, cheers erupted every time someone got the hang of it. The room was soon filled with a warm and lively energy—a wonderful contrast to the focused tension of our usual studio environment.

As the cake neared completion, everyone seemed to gradually get the hang of it. Watching their focused expressions as they moved the palette knives, I felt that their dedication to taking on a challenge and “bringing a vision to life”—regardless of the medium—truly reflects the way they approach their daily work.
The room was filled with laughter and spontaneous praise, with voices calling out, “That’s amazing!” and “It looks so professional!” It was wonderful to see everyone’s natural smiles, a side of them that differs from the stoic atmosphere of the studio. Genuinely enjoying an unfamiliar task and admiring each other’s creative instincts made this a truly fresh and inspiring experience for me.
Finally, with the teacher’s skillful finishing touches, the Mimosa cake—a true symbol of spring—was revealed in all its beauty. It was such a pleasant time, sharing the pure excitement of creating something together as a team.

A Peaceful Moment Around the Table
Tea time spent around the sweets we crafted with our own hands was a truly luxurious experience. While the rain continued to fall outside, the time spent sharing something we had shaped using all five senses was filled with a quiet sense of accomplishment and contentment. Through the shared process of creating, I could feel the team’s rhythm naturally deepening and falling into perfect sync.
The endless conversations flowed in a pace of time far gentler than our usual studio routine. I realized that this very atmosphere—this calm and comfortable vibe—is the essence of the “brand experience” our clients feel the moment they step into our studio.
Nourishing the Heart, Moving One Step Forward
This experience brought a quiet shift in how I personally approach my work. The sensation of “building something delicately and thoughtfully, step by step,” which I felt through pastry making, reminded me that this is an essential feeling I must never forget—both in my creative work and in how I welcome our clients.
By immersing myself in this calm flow of time, I felt my own rhythm align in a way that surprised even me. That atmosphere at the pastry studio—sophisticated yet somehow comforting and soft—is something I want to emulate. I feel inspired to channel that warmth born from handcraft into my own expression and the space I create, ensuring our clients can relax from the bottom of their hearts.

With these thoughts in mind, I am returning to my daily routine at the studio. I wonder where our next outing in two months will take us. Glasswork, camping, or perhaps horseback riding?Please look forward to our next journey.
